v3: move stress_edid to v3/clients

`stress_edid.py` is supposed to do a video (therefore not covered by
the deprecated v2 anymore) stress test by swapping lots of EDIDs, We've
only tested it on v3 and it even has some v3isms in it.

Let's move it to our folder.

Also make it use the common read_edid() function from screenshot.py
